One 10 kg tub should be mixed with 4 X 400 g packs of golden syrup (approx. 300g sugar) this will bring the total sugar level up to 25%.

Mix the syrup in the 10kg tub BEFORE adding this into your machine.

If the machine is put in ‘Fresh Keeping’ mode overnight, then first ‘pour’ the following morning may need to be recycled back into the hopper in order to get the consistency right before serving.
